Cooking for Passover # 1

In a few days, many of us all around the world will celebrate the Passover Seder. This Seder will be totally different without all the family and being isolated. We start with the question which is so relevant today of: "what has changed?" and "How is this night any different than before?" and will end with: "next year in Jerusalem" We promise to be here for you, this year and next year when you come to visit us. Matzah Brei is a common dish in our house during the Passover week and we prepare it with different vegetables or just plain with matzah and eggs

Cooking for Passover # 1

Passover Zucchini Matzah Brei

 

Ingredients:

  • 4 Matzah
  • 4 Eggs
  • 1 cup warm milk
  • 1 zucchini grated
  • 4 scallions thinly sliced
  • 1/2 cup grated feta cheese
  • 1/2 cup grated parmesan cheese
  • Bunch of parsley chopped
  • 2 mangold leaves or bunch or spinach leaves cut into stripes
  • Salt, black pepper
  • 3 tbsp melted butter + 1 tbsp olive oil

 

Preparation:

  • Break the Matzah into bite-size and place in a bowel
  • Warm the milk in a small pot and pour over the Matzah. Mix and let soak for 2 minutes. Drain the Matzah and put in a large bowel
  • Add all ingredients (except butter and oil) to the matzah bowl and mix.
  • In a large frying pan over medium heat melt butter and oil and fry the Matzah bowel, flatting it down with a spoon for 5 minutes until the bottom is hard. Place a plate over the frying pan and flipped the matzah over. Slice it back to the pan and fry for an additional 5 minutes.

 

We love to eat it with soft white cheese and accompanied by a fresh salad
