Passover Zucchini Matzah Brei
Ingredients:
- 4 Matzah
- 4 Eggs
- 1 cup warm milk
- 1 zucchini grated
- 4 scallions thinly sliced
- 1/2 cup grated feta cheese
- 1/2 cup grated parmesan cheese
- Bunch of parsley chopped
- 2 mangold leaves or bunch or spinach leaves cut into stripes
- Salt, black pepper
- 3 tbsp melted butter + 1 tbsp olive oil
Preparation:
- Break the Matzah into bite-size and place in a bowel
- Warm the milk in a small pot and pour over the Matzah. Mix and let soak for 2 minutes. Drain the Matzah and put in a large bowel
- Add all ingredients (except butter and oil) to the matzah bowl and mix.
- In a large frying pan over medium heat melt butter and oil and fry the Matzah bowel, flatting it down with a spoon for 5 minutes until the bottom is hard. Place a plate over the frying pan and flipped the matzah over. Slice it back to the pan and fry for an additional 5 minutes.
We love to eat it with soft white cheese and accompanied by a fresh salad
